Basmati Rice

Ingredients

  • 2 cups of basmati rice

  • 4 cups of water

  • 1 bay leaf

  • 2 Tbsp Vegetable oil

  • 1 (2 inch) piece of cinnamon stick

  • 3 pods green cardamom

  • 3 whole black cloves

  • 1 tsp of Cumin seeds

  • 4 black whole peppercorn

  • Optional (1 small onion sliced)

  • Optional (half cup of frozen peas or any vegetable)

  • salt to taste

Directions

  1. Rinse the Basmati Rice in water approximately 5 times so its clear and not milky in color. This will wash all the starch away.

  2. Add vegetable oil in a large pot or saucepan over medium high heat. Add the cinnamon stick, cardamom pods, cloves, peppercorn, bayleaf and the cumin seeds into the hot oil.

  3. Toast the cumin seeds for about a minute until fragrant then add in the sliced onion and saute until a rich golden brown.

  4. Meanwhile drain the water from the washed rice and stir in to the pot.

  5. And add in the frozen peas and the salt to taste approx 1 tsp

  6. Add the 4 cups of water and bring to a rapid boil. Once it boils cover and reduce the heat to low.

  7. Simmer for about 18 minutes, or until all the water has been absorbed. Let stand for 5 minutes and make sure the rice tastes tender and not hard. Once cooked then fluff with a fork before serving and Enjoy!
