Indian Potato Salad


4 Large Potatoes boiled and diced into 1 inch
chunks
2 stalks of celery
few sprigs of fresh dill and fresh cilantro
¼ cup of chopped red onion
3 Tbsp of lemon juice
6 Tbsp of Mayonnaise
1 green chili chopped
3 Tbsp of Maani’s Curried Chickpeas
2 Tbsp of Dijon mustard
Salt and Pepper to taste

Instructions

  1. Boil the potatoes till fork tender and drain the
    water, chop and set aside.
  2. Then mix together the mayonnaise, lemon juice,
    Dijon mustard, Maani’s spice blend, enough salt,
    and pepper.
  3. Then mix in the chopped onion, celery, dill and
    chopped potatoes and combine well.
  4. Then refrigerate for 30 minutes and you can
    garnish with more chopped fresh dill and fresh
    cilantro.
