
Indian Potato Salad
4 Large Potatoes boiled and diced into 1 inch
chunks
2 stalks of celery
few sprigs of fresh dill and fresh cilantro
¼ cup of chopped red onion
3 Tbsp of lemon juice
6 Tbsp of Mayonnaise
1 green chili chopped
3 Tbsp of Maani’s Curried Chickpeas
2 Tbsp of Dijon mustard
Salt and Pepper to taste
Instructions
- Boil the potatoes till fork tender and drain the
water, chop and set aside. - Then mix together the mayonnaise, lemon juice,
Dijon mustard, Maani’s spice blend, enough salt,
and pepper. - Then mix in the chopped onion, celery, dill and
chopped potatoes and combine well. - Then refrigerate for 30 minutes and you can
garnish with more chopped fresh dill and fresh
cilantro.
