Thai Cucumber Salad


3 celery stalk sliced

1 large cucumber

1 avocado, peeled and chopped

1 Tbsp of unseasoned rice vinegar

2 tsp of toasted sesame oil

1 tsp of toasted sesame seeds

1 bunch of cilantro leaves chopped

3 scallions thinly sliced

roasted and unsalted peanuts

salt and pepper to taste

1/4 tsp of red pepper flakes


Whisk vinegar, oil, red pepper flakes in a bowl. Add the chopped celery, cucumber, avocado and scallions. Season with salt and pepper and top with sesame seeds, peanuts and combine. This salad can be made ahead and I serve it with the Mint and Basil Stir-fry and 5 minute garlic shrimp.
