Chicken Meatballs

1 lb of minced chicken

zest of one lemon

2 slices of white or wheat bread

5 tbsp of heavy cream

1 tsp of vegetable oil

½ tsp cumin seeds

2 green chili’ts chopped

½ onion chopped

1 tbsp ginger garlic paste

½ tsp ground black pepper

¼ tsp garam masala

½ tsp turmeric powder

pinch of red pepper flakes

3 cloves of garlic chopped

1/3 cup of cilantro chopped

2 tbsp of soy sauce

2 tsp of lemon juice

1 egg

1 tsp of salt or to taste

In a mixing bow, combine the minced chicken, lemon zest, soy sauce and salt, toss to season chicken.

In a separate bowl, add the bread and cream and let it soak well. Mash the bread mixture. Beat the egg and add it to the bread mixture, stir to combine and set aside.

Heat the vegetable oil in a sauté pan over medium heat. Add the cumin seeds, garlic, lemon juice, green chili’s and onions and fry for a few minutes. Add the ginger garlic paste for about another minute then add the ground spices.  Add salt to taste and cool completely in the fridge.

Once completely cool then add it to the chicken mixture along with the bread mixture, pepper, garam masala, turmeric, red pepper flakes and salt to taste. Mix everything gently but don’t overwork.  In a medium sized fry pan add the vegetable oil  and form the meatballs with your hand or a mini scooper. With lightly oiled hands roll the mixture into small sized balls. Fry the meatballs for 7 minutes until the sides are all brown.

Remove meatballs from the pan when completely cooked through and garnish with cilantro.
